To help you get started, The BBQ Grill Store is hosting a hands-on Dry-Ageing and Grilling Class where you can see the full process from raw cut to perfectly charred steak.

In this class, you will learn why controlled temperature, humidity, and airflow are crucial for safe dry-ageing, and how the Liberty Meat Ager creates the ideal environment to tenderise meat while concentrating flavour. You will also see how to finish those dry-aged cuts over the both charcoal and gas grills – how to properly sear, and rest the meat for maximum juiciness.

  • How dry-ageing works: what happens to meat over time, why flavour deepens, and how the Liberty Meat Ager keeps conditions safe and stable.
  • Choosing the right cuts for dry-ageing (such as ribeye or striploin) and how long to age them for different flavour intensities.
  • Trimming and preparing dry-aged meat before cooking so you get the best yield and texture.
  • Grilling techniques on both gas and charcoal grills

How the session works

During the session, the instructor will walk you through:

  • A guided explanation of the dry-ageing process using the Liberty Meat Ager
  • A live grilling hands-on demo on both charcoal and gas grills, including vent control for charcoal grills, searing, and finishing temperatures.
  • Tasting portions so you can compare flavours and textures and understand what “properly dry-aged and grilled” should taste like.

You’ll also get time for Q&A, so you can ask specific questions about your own set-up at home, cut selection, or recipe ideas.
